Citrus fruit and honey ice lolly
“Ice lolly”, “ice pop”, “popsicle” or “picolé” in my mother language… Those are just a few different ways to refer to this treat that most likely will bring sweet childhood memories to your mind! Having grown up in a tropical country and with an amazing variety of fruit trees in the backyard of my house, fresh fruit juice used to accompany most of our meals. Then the juices that were left over from our meals used to go to our freezer to become this treat that I love since then: ice lollies! Well, they didn’t use to look like ice lollies at that time because we only had ice-cube moulds in our house, but even in cubes they surely sweetened and refreshed the hot days of my childhood…
This recipe is a variation of the citrus fruit tartare that I previously shared with you. The delicious flavours of the blend of juices and honey in that dessert and my old passion for ice lollies inspired me to try this recipe and when I did, my husband and I loved it…

- 400 ml of orange juice (about 4 oranges)
- 120 ml of red grapefruit juice (about 1 red grapefruit)
- 120 ml of pink grapefruit juice (about 1 pink grapefruit)
- 60 ml of lime juice (about 2 limes)
- 100 ml of Acacia honey or molasses (about 7 table spoons)
- zest of 1 1/2 limes
Preparation
- Squeeze the juice of the oranges, grapefruits and limes and add them together in a jar.
- Zest the lime, making sure to grate only the green outer part of the peel and add it to the blend of juices.
- Add half of the amount of the honey or molasses, stir all the ingredients very well and try it. If you feel that you need more sweetness to balance the citric and bitter flavours of the fruits, add more honey or molasses until it is sweet enough for your taste.
- Leave the blend of juices infusing in the lime zest for 15 minutes, then strain the juice using a fine sieve to remove the lemon zest and bits from the juice.
- Pour the mix in ice lolly moulds and freeze them for at least 24 hours.
- Remove the ice lollies from their moulds and serve them immediately.
Tips
Don’t follow this recipe to the letter! Trust your taste buds… Only you know what are the ideal levels of sweetness and sourness for your taste. Additionally, the fruit you will use might have completely different levels of sugar from the ones that I did. Add less than half of the amount of honey or molasses that I suggested in this recipe and try it. If it is not sweet enough, keep on adding small portions and stop when you are happy with what you taste.
